Assorted Halloween Cupcakes

1 vanilla boxed cake mix

1 tablespoon green decorating sugar

Orange food coloring

Yellow food coloring

Cupcake liners

Preheat the oven to 350 degrees.

Mix cake batter as directed on the box. Divide batter into thirds.

Fill four lined muffin tin cups with the plain vanilla batter until almost full. 

Stir 1 tablespoon of green decorating sugar into 1/3 of the batter and stir until it turns green. Fill four of the lined muffin tin cups.

Divide the remaining 1/3 of the batter into thirds again. Add yellow food coloring to one portion, orange food coloring to another portion, and stir. Fill the remaining four lined muffin cups with a layer of yellow batter, followed by a layer of orange batter, and finally the remaining vanilla batter, to create a candy corn affect.

Bake 20-25 minutes and let cool completely

Ghost Cupcakes

4 vanilla cupcakes

3.3 oz white chocolate pudding

1 cup milk

4 oz. PICS frozen whipped topping, thawed

8 PICS mini chocolate chips

Stir the pudding and milk together until it thickens. Fold in whipped topping. Put aside enough to frost the top of the four vanilla cupcakes. Place the rest of the mixture into a snap and seal lunch sized bag and clip the corner to create a piping tool.

Use an apple corer (or ??) to create a hollowed center in the cupcakes. Pipe the whipped topping into the center, then frost the cupcakes with the topping put aside. Pipe more whipped topping on top of the cupcakes, like a vanilla ice cream cone, to create ghosts. Add two mini chocolate chips as eyes.

Spider Cupcakes

4 green cupcakes

Green frosting

12 pieces black licorice twists

8 Large candy eyes

Using a star tipped tool, pipe the green frosting in dollops onto cupcakes, creating a bumpy texture.

Add two large candy eyes to each cupcake.

Cut each black licorice twist in half and then carefully score in the middle with a sharp knife so that the twist can be bent to create legs. Push legs into each cupcake.

Candy Corn Critters

4 vanilla cupcakes

4 tablespoons PICS butter, room temperature

2 ½ cups PICS confectioner’s sugar

1 ½ teaspoons PICS vanilla extract

3 tablespoons PICS milk

8 large candy eyes

Candy corn

Using an electric mixer, whip butter, confectioner’s sugar, vanilla extract and milk in a bowl.

Frost cupcakes, add two large candy eyes, and place candy corns on top, creating a  spiked affect.

Swap the Oil:  Use 4 oz. of PICS unsweetened applesauce.

Eliminate the Eggs:  Swap out the eggs with ¼ cup of PICS plain Greek yogurt.

Make a Whole Dozen:  To make a complete dozen of one of these variations, simply triple the directions for the selected cupcake.

Halloween is Here!

BOO! Did Halloween sneak up on you too? Halloween has always been one of our favorite holidays. Costumes, candy, jack-o-lanterns, what’s not to love? Growing up trick-or-treating was always a blast, but don’t worry, if you’re too old for trick-or-treating there’s still plenty of ways to have fun on Halloween.

A scary movie marathon is an easy and fun way to get the spook factor in. With all of the streaming services available these days, the options are a plenty. Check out classic scares like The Shining, Scream, or Nightmare on Elm Street. Or more family-friendly options like Halloweentown or Hocus Pocus. Gather your friends, grab some PICS Popcorn and settle in for some frights.

National Coffee Day!

Wake up! September 29th is National Coffee Day and we’re celebrating! Coffee has a surprisingly long history, and in honor of the holiday we’re looking to uncover all of the mysteries surrounding this beloved bean. We did some research and discovered some interesting information that you may not have known before.

It is said that coffee was first discovered by a goat herder named Kaldi. Kaldi noticed that his goats would become energetic and not sleep at night after they ate the berries from a certain tree. He was curious, and he brought his realization to the abbot of the local monastery. The abbot made himself a drink with these berries and found that it was helpful in keeping him alert during evening prayer. The abbot shared his discovery amongst the other monks, and word of these berries moved east to the Arabian Peninsula.

Coffee cultivation and trade began on the Arabian Peninsula, where coffee was regularly enjoyed in homes, and the first coffee houses were created. These early coffee houses became important places to catch up on conversation and current music and news. They began to appear all over cities in the Near East where they were called “qahveh khaneh.” They became an essential spot for the spread of information, and because of this they were known as “Schools of the Wise.”

Europeans who would travel to the Near East would return home with stories of this magical drink, and eventually coffee made its way to Europe. At first, coffee was met with backlash in these European countries being called the “bitter invention of Satan,” and becoming condemned by the local clergy. However, Pope Clement VIII intervened, tasting the drink himself and finding it so satisfying he lifted the ban. Eventually, these same coffee houses became a common theme throughout countries like England, Austria, France, Germany, and Holland. Coffee replaced the popular breakfast drinks at the time, beer and wine, and became a new European morning staple.

But how did coffee make its way to the Americas? Great question! In 1714, the Mayor of Amsterdam presented a coffee plant as a gift to King Louis XIV of France. The King had the young plant grown in the Royal Botanical Gardens in Paris. In 1723, a young naval officer, Gabriel de Clieu obtained a seedling from the plant. On a traitorous journey home, he faced horrendous weather, a saboteur who attempted to destroy the seedling, and even a pirate attack. Yet, he managed to plant the seed in Martinique. This seed began an explosion of coffee trees in the Americas, and it led to the abundance of coffee we have today.

Today, Americans all over the country rely on coffee to power them through their busy day. It’s become a staple drink. But coffee isn’t just used as a beverage, it also makes for a wonderful ingredient in baking and dessert cuisine.

KCC Peach Bread by Jodie Fitz

Perfect for a breakfast sandwich on the run, this bread can also be used to change up a lunchbox sandwich or after-school snack.

4 peaches

1 ½ teaspoons PICS cinnamon

2 PICS eggs, large

½ cup PICS brown sugar

½ cup PICS organic cane sugar

4 oz. PICS cinnamon applesauce

1/3 cup PICS milk, low fat

1 teaspoon PICS vanilla extract

1 ¾ cups PICS all-purpose, unbleached flour

1 tablespoon PICS baking powder

½ teaspoon PICS sea salt

Preheat oven to 350 degrees.

Wash and peel peaches. Remove pits, then slice and dice.  

In a bowl, mix diced peaches with 1 teaspoon cinnamon until evenly distributed and fully coated. Set aside.

In a separate bowl, combine eggs, sugars, applesauce, milk and vanilla extract. Mix well with an electric mixer.

In another bowl stir together ½ teaspoon cinnamon, flour, baking powder and salt.  

Add dry ingredients to the egg mixture and combine using an electric mixer.  

Fold peaches into the batter.

Grease an 8” x 8” glass baking dish. Pour batter into the dish, making sure to spread evenly.

Bake for 50 minutes. Let cool completely before slicing and serving,

Sandwich Spread:  Stir together 3 tablespoons PICS cream cheese with 1 tablespoon PICS honey.  Spread between two slices of peach bread to make a sandwich. (This mixture will make two sandwiches.)

Removing the pit:  With an adult’s help and permission, use a paring knife to carefully slice into the peach until you reach the pit Slowly cut all the way around the pit of the peach.  Set the knife down and twist the peach halves in opposite directions to separate the two halves.  Remove the pit and discard.

Build Your Own Burger Toppings

Break out the buns and fire up the grill, it’s National Cheeseburger Day! Today we celebrate a classic meal that is near and dear to our hearts. The best thing about cheeseburgers, you can always build your own, stacked high with your favorite toppings. You can stick with your go-to or switch it up each time. Personally, we like to be creative and switch it up. Check out some of our favorite build your own burger toppings!

Chiles: If you’re like us, you love a little kick to your food. Chiles elevate any good burger with great heat and flavor.

Mushrooms: Grilled of sauteed mushrooms make a great addition to your cheeseburger. We recommend using swiss cheese as it works as the best complement.

Avocados: Avocados are creamy and delicious, plus they make your burger more filling. More satisfying, tastier, why wouldn’t you add avocado?

LTO: LTO aka lettuce, tomato, onion. Sometimes you’re in the mood for a good old fashioned, classic cheeseburger. A little LTO will get you there.

Coleslaw: Coleslaw is commonly viewed as a side dish. But who needs a side dish when you can just add it to your cheeseburger?

Pineapple: Give your cheeseburger a more tropical feel by adding pineapple. Throw some BBQ sauce for a top-notch burger combination.

Maple Syrup: Maple syrup is good with bacon. Bacon is good on cheeseburgers. Therefore, maple syrup must be awesome on bacon-topped cheeseburgers. It’s simple science.

Fried Egg: If you’re in the mood for something extra, add some fried egg to your cheeseburger. We like to save this one for special occasions.

Mac & Cheese: It is a cheeseburger after all, make it extra cheesy and extra delicious.

Kettle Chips: Another side dish that is sometimes better off just on the burger. We prefer kettle chips over regular potato chips for the extra crunch factor.

Hummus: Hummus brings a little swagger to your cheeseburger. Brings more flavor and a Mediterranean flair to the plate.

Fried Green Tomatoes: Replace the old red tomatoes with some southern-style, bold fried green tomatoes. Crunchy and tangy these are top tier in our book.
